The syllabus includes an introduction to microbiology, food poisoning, food preservation and storage, temperature control, layout and design of food premises, cleaning and disinfection and pest control. There is an input on the most recent developments in food legislation, the concepts of due diligence, HACCP and SFBB. A sixty question multiple choice paper will conclude the course. Pass mark 40/60. Equipment maintenance engineers, off site business owners/managers, staff performing control or monitoring activities and supply and delivery personnel. Holders of this qualification will have a basic knowledge and understanding of the importance of HACCP as a preventative food safety management system that can be applied to all sectors of the food industry. This will include a basic introduction to HACCP systems and a simple overview of the terminology, principles and practical application of HACCP. Safer Food Better Business Workshops Safer Food Better Business (SFBB) is an innovative and practical approach to food safety management. This food safety management pack has been developed to help small catering businesses such as restaurants, cafes and takeaways comply with the new regulations introduced in January 2006. There are currently two different SFBB packs – one for small catering businesses and one for small retail businesses. This three hour seminar is aimed at business owners or managers/supervisors with responsibility for safe food production. Where food is produced, prepared and served commercially businesses are required to have in place a written food safety management system based on the principles of HACCP. The session covers legislation and the introduction of regulation EC852/2004 on the Hygiene of Foodstuffs, HACCP, and food hazards and culminates with the issue and completion of an SFBB pack for each delegate.
